A copycat Culver's Reuben with lean corned beef, Swiss, sauerkraut, and Thousand Island on buttered rye, made on a Blackstone, in cast iron, or in the air fryer. Ready in 20 minutes.
Ingredients
4slicesrye, or marble rye bread
2tablespoonssalted butter, softened
8ouncesthin-sliced lean corned beef
4slicesSwiss cheese
1cupsauerkraut, drained and squeezed dry
1/4cupThousand Island dressing, or Frisco Sauce
Instructions
Prep
Squeeze the sauerkraut dry in paper towels.
Butter one side of each slice of bread.
Blackstone griddle
Preheat to medium-low, about 325°F to 350°F. Warm the corned beef and sauerkraut 1 to 2 minutes.
Lay the bread butter-side down. Layer each with 1 slice Swiss, half the corned beef, half the sauerkraut, 2 tablespoons dressing, and 1 more slice Swiss. Top with bread, butter-side up.
Cook 3 to 4 minutes per side, covering with a dome for the last minute of each side, until golden and melty.
Cast iron skillet
Heat the skillet over medium-low. Warm the corned beef and sauerkraut 1 to 2 minutes, then set aside.
Assemble the sandwiches in the skillet as above.
Cook 3 to 4 minutes per side, pressing gently and covering for the last minute, until golden and melty.
Air fryer
Preheat to 370°F. Warm the corned beef and sauerkraut in a foil boat for 2 to 3 minutes.
Assemble the sandwiches and secure each with 2 toothpicks.
Air fry 5 minutes, flip, and cook 3 to 4 minutes more.
Serve
Rest 1 minute, remove any toothpicks, slice diagonally, and serve.
