Prepare the crockpot by coating with cooking spray.
Place the 1 ½ pounds boneless chicken breast in the bottom of the crockpot add 1 yellow onion, 30 1/2 ounces black beans20 ounces diced tomatoes with green chilies, 4 ounces diced green chilies, 15.25 ounces corn, 15 ounces tomato sauce, 4 cloves garlic, 2 ounces taco seasoning, 2 ounces ranch dressing, and 16 ounces cream cheese, softened, stirring to slightly combine.
Cover and cook on low for 6 hours or on high for about 4 hours.
Remove the chicken to a large bowl and using forks or bear claws, shred the chicken before returning to the crockpot and mixing together.
Serve with garnishes like extra sour cream, shredded cheese, tortilla strips, and cilantro.
