Ingredients
2avocados, diced
¼cupsun-dried tomatoes, chopped
2tablespoonsred onion, finely chopped
¼cupshredded cheese, cheddar, mozzarella, or your choice
8egg roll wrappers
2teaspoonsoil, for brushing or air fryer spray
Salt and pepper, to taste
Instructions
In a bowl, combine diced 2 avocados¼ cup sun-dried tomatoes, 2 tablespoons red onion, ¼ cup shredded cheeseSalt and pepper. Mix gently to avoid mashing the avocado.
Place an 8 egg roll wrappers on a clean surface. Spoon about 2 tablespoons of filling near one corner. Fold the sides over, then roll tightly and seal the edge with a dab of water. Repeat with remaining wrappers.
Lightly brush or spray each egg roll with 2 teaspoons oil to help them crisp.
Preheat the air fryer to 375°F (190°C). Arrange egg rolls in a single layer without touching. Cook for 8–10 minutes, flipping halfway, until golden brown and crispy.
Let cool slightly before serving. Enjoy with your favorite dipping sauce, like spicy ranch or sriracha mayo.
