Copycat Buc-ee's Rocky Road Fudge

Description

This thick, creamy copycat Buc-ee's rocky road fudge is made with semi-sweet and milk chocolate, sweetened condensed milk, toasted pecans and mini marshmallows. It's easy, no-thermometer, and ready to chill in 20 minutes.

Ingredients 

  • 2 cups semi-sweet chocolate chips, 12 oz
  • 1 cup milk chocolate chips, 6 oz
  • 14 ounces sweetened condensed milk
  • 2 tablespoons unsalted butter
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows, plus extra for topping
  • 1 cup pecans, chopped, plus extra for topping

Instructions

  • Line an 8x8-inch pan with parchment paper, leaving an overhang on two sides.
  • Toast the pecans in a dry skillet over medium heat for 3 to 5 minutes, stirring often, until fragrant. Let cool.
  • In a medium saucepan over low heat, combine the semi-sweet chips, milk chocolate chips, sweetened condensed milk and butter. Stir constantly until melted and smooth, about 5 minutes.
  • Remove from heat and stir in the vanilla and salt.
  • Let the mixture cool for 5 to 7 minutes, until warm but not hot.
  • Gently fold in the mini marshmallows and toasted pecans.
  • Spread into the prepared pan and press flat. Press extra marshmallows and pecans into the top.
  • Refrigerate for at least 3 hours, until firm.
  • Lift out by the parchment and cut into 36 squares, wiping the knife clean between cuts.

Notes

  • Microwave option: Melt the chocolate, condensed milk and butter in 30-second bursts, stirring between each, then continue from step 4.
  • Keep marshmallows whole: Always let the chocolate cool before folding them in.
  • Swap the nuts: Walnuts or almonds work in place of pecans; leave them out for nut-free fudge.
  • Storage: Airtight at room temperature up to 1 week, refrigerated 2 to 3 weeks, or frozen up to 3 months.
