Copycat Buc-ee's Pecan Pralines

Description

Creamy, buttery Texas-style pecan pralines that taste just like the ones from the Buc-ee's candy counter.

Ingredients 

  • ½ cups granulated sugar
  • 1 cup packed light brown sugar
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter
  • ¼ teaspoon kosher salt
  • 1 tablespoon pure vanilla extract
  • 2 cups pecan halves, toasted

Instructions

  • Toast the pecans at 350°F for 6–8 minutes (or air fry at 320°F for 4–5 minutes). Set aside. Line two baking sheets with parchment paper.
  • In a heavy 3-quart saucepan, combine the granulated sugar, brown sugar, heavy cream, butter, and salt. Cook over medium heat, stirring, until the sugar dissolves.
  • Attach a candy thermometer and cook, stirring occasionally, until the mixture reaches 236°F (soft-ball stage), 8–10 minutes.
  • Remove from heat. Stir in the vanilla and toasted pecans.
  • Stir vigorously for 1–3 minutes until the mixture loses its gloss and begins to thicken.
  • Working quickly, drop heaping tablespoons onto the parchment. Let set at room temperature for 20–30 minutes before serving.

Notes

  • Do not make on a humid or rainy day.
  • If the mixture hardens in the pan before you finish scooping, stir in 1 tablespoon of hot water and warm gently over low heat.
  • Store in an airtight container at room temperature for up to 2 weeks.
