Description

Make the famous Buc-ee's breakfast burrito at home! Fluffy scrambled eggs, melty cheddar, and savory sausage or crispy bacon rolled in a warm flour tortilla and wrapped in foil, just like the hot counter. Freezer-friendly for easy grab-and-go mornings.

Ingredients 

Filling

  • 12 large eggs
  • 1/4 cup whole milk
  • 1 lb ground breakfast sausage, OR 1 lb bacon, or 1/2 lb of each
  • 2 cups shredded cheddar, or cheddar-Jack cheese, 8 oz
  • 1 tablespoon butter

Seasoning

  • 1/2 teaspoon salt
  • 1/2 teaspoon coarse black pepper
  • 1/4 teaspoon garlic powder, optional

Wrapping

  • 8 large flour tortillas, 10-inch

Instructions

  • Cook the meat: Brown the sausage in a large skillet over medium heat for 8–10 minutes, breaking it into crumbles, until it reaches 165°F. For bacon, cook until crispy, drain on paper towels, and chop. Drain well and set aside.
  • Whisk the eggs: In a mixing bowl, whisk eggs, milk, salt, pepper, and garlic powder until fully combined.
  • Scramble the eggs: Melt butter in a nonstick skillet over medium-low heat. Add eggs and gently stir for 4–5 minutes, removing from heat while still slightly glossy.
  • Warm the tortillas: Microwave tortillas under a damp paper towel for 20–30 seconds until soft and pliable.
  • Assemble: Sprinkle about 2 tablespoons cheese down the center of each tortilla. Top with about 1/3 cup eggs, a scoop of sausage or bacon, and another 2 tablespoons cheese.
  • Roll: Fold the bottom edge over the filling, tuck in the sides, and roll tightly.
  • Wrap and serve: Wrap each burrito in foil and serve warm, or cool completely before freezing.

Notes

  • To freeze: Cool filling 10–15 minutes before assembling. Wrap each burrito in plastic wrap, then foil. Store in a labeled freezer bag for up to 3 months.
  • Microwave reheat: Remove foil, wrap in a damp paper towel, and microwave on high 2–3 minutes from frozen, flipping halfway.
  • Air fryer reheat: Remove foil and air fry at 350°F for 12–15 minutes from frozen, or 8–10 minutes thawed.
  • Oven reheat: Keep foil on and bake at 375°F for 35–40 minutes from frozen, or 20 minutes thawed.
  • Food safety: Reheat until the center reaches 165°F.
  • Avoid soggy burritos: Drain the meat well and add salsa or sour cream after reheating, not before freezing.
