Copycat Buc-ee's Bohemian Garlic Beef Jerky

Description

Make copycat Buc-ee's beef jerky at home! Tender strips of beef marinated in garlic, soy, and brown sugar, then dried in the oven or a dehydrator for that Bohemian Garlic flavor you love.

Ingredients 

  • 2 pounds beef eye of round, trimmed of fat
  • ½ cup water
  • cup low-sodium soy sauce
  • ¼ cup packed light brown sugar
  • 1 tablespoon Worcestershire sauce
  • 4 cloves garlic, minced
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon coarse black pepper
  • ½ teaspoon liquid smoke
  • ½ teaspoon MSG, optional
  • 1/2 teaspoon Prague Powder #1, optional; the standard ratio is 1 teaspoon per 5 pounds of meat
  • 1 tablespoon granulated garlic, for topping

Instructions

  • Freeze the beef for 1 to 2 hours, until firm. Slice against the grain into ¼-inch strips.
  • Whisk together the water, soy sauce, brown sugar, Worcestershire, garlic, garlic powder, onion powder, pepper, liquid smoke, MSG, and curing salt (if using) until the sugar dissolves.
  • Combine the beef and marinade in a zip-top bag. Refrigerate for 12 to 24 hours, flipping once.
  • Drain the strips and pat them dry. Sprinkle with granulated garlic.
  • Dry in a 170°F oven with the door propped open for 3 to 5 hours, or in a 160°F dehydrator for 4 to 6 hours, until a cooled strip cracks when bent but doesn't snap.
  • Spread the dried strips on a baking sheet and heat in a 275°F oven until they reach 160°F, about 10 minutes.
  • Cool completely, blot off any oil, and store in an airtight container.
