Finely chopped cabbage and carrots in a creamy, sweet, and tangy dressing, just like the Bojangles fixin'. Ready in 10 minutes, better after a few hours in the fridge.
Ingredients
1small head green cabbage, about 8 cups finely chopped
1mediumcarrot, finely grated
2tablespoonsgrated onion
3/4cupmayonnaise
1/4cupbuttermilk
3tablespoonswhite vinegar
1/3cupgranulated sugar
1tablespoonlemon juice
3/4teaspoonsalt
1/4teaspoonblack pepper
1/2teaspooncelery seed, optional
Instructions
Cut the cabbage into chunks and pulse in a food processor until finely chopped. Transfer to a large bowl with the grated carrot and onion.
In a small bowl, whisk together the mayonnaise, buttermilk, white vinegar, sugar, lemon juice, salt, pepper, and celery seed until smooth.
Pour the dressing over the cabbage mixture and stir until fully coated.
Cover and refrigerate for at least 2 hours, or overnight.
Stir, drain any excess liquid, and serve cold.

Notes
For the closest texture to Bojangles, chop the cabbage very fine, about the size of rice grains.
Taste after chilling and adjust with a pinch more sugar or a splash of vinegar.
