Description

Finely chopped cabbage and carrots in a creamy, sweet, and tangy dressing, just like the Bojangles fixin'. Ready in 10 minutes, better after a few hours in the fridge.

Ingredients 

  • 1 small head green cabbage, about 8 cups finely chopped
  • 1 medium carrot, finely grated
  • 2 tablespoons grated onion
  • 3/4 cup mayonnaise
  • 1/4 cup buttermilk
  • 3 tablespoons white vinegar
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon celery seed, optional

Instructions

  • Cut the cabbage into chunks and pulse in a food processor until finely chopped. Transfer to a large bowl with the grated carrot and onion.
  • In a small bowl, whisk together the mayonnaise, buttermilk, white vinegar, sugar, lemon juice, salt, pepper, and celery seed until smooth.
  • Pour the dressing over the cabbage mixture and stir until fully coated.
  • Cover and refrigerate for at least 2 hours, or overnight.
  • Stir, drain any excess liquid, and serve cold.

Notes

  • For the closest texture to Bojangles, chop the cabbage very fine, about the size of rice grains.
  • Taste after chilling and adjust with a pinch more sugar or a splash of vinegar.
