3lbswhite sweet potatoes, peeled and cut into 1-inch cubes
3tbspolive oil
1 ½tspsalt
1tspblack pepper
2tspgarlic powder
2tsppaprika
1tspdried oregano
Instructions
Start by preheating your oven to 425°F and lining a baking sheet with parchment paper. Peel and cube the white sweet potatoes into even pieces so they cook evenly.
Toss the potatoes with olive oil, salt, pepper, garlic powder, paprika, and oregano until every piece is well coated. Spread them out in a single layer so they roast instead of steam.
Bake for 25–35 minutes, flipping halfway through, until the edges are golden and caramelized and the centers are tender. Let them cool slightly before serving so the flavor really settles in.
