Description

This copycat Buc-ee's club sandwich is stacked with ham, turkey, crispy bacon, and melty smoked cheese, then finished with sun-dried tomato pesto and spicy mayo on a toasted brioche bun. Wrapped in foil and warmed until gooey, it tastes just like the road trip favorite.

Ingredients

Spicy Mayo

  • ½ cup mayonnaise
  • 1 to 2 tablespoons sriracha, to taste
  • 1 teaspoon lime juice
  • ½ teaspoon garlic powder

Sandwiches

  • 4 brioche buns
  • 2 tablespoons butter, softened
  • 8 slices thick-cut bacon
  • ½ pound thinly sliced deli turkey
  • ½ pound thinly sliced deli ham
  • 4 slices smoked provolone or smoked gouda, or sharp cheddar
  • ¼ cup sun-dried tomato pesto

Optional

  • 2 to 3 tablespoons mango habanero sauce
  • Sliced pickles or white onion, for topping

Instructions

  • Cook the bacon. Air fry at 400°F for 8 to 10 minutes, or bake at 400°F for 15 to 18 minutes, until crispy. Drain on paper towels.
  • Make the spicy mayo. In a small bowl, stir together the mayonnaise, sriracha, lime juice, and garlic powder.
  • Toast the buns. Spread butter on the cut sides of the buns and toast in a skillet over medium heat for 1 to 2 minutes, until golden.
  • Add the sauces. Spread sun-dried tomato pesto on the bottom buns and spicy mayo on the top buns. Drizzle with mango habanero sauce, if using.
  • Assemble. Layer the ham, turkey, and bacon on the bottom buns, top each with a slice of cheese, and add the top buns.
  • Wrap and warm. Wrap each sandwich tightly in foil and bake at 350°F for 10 to 12 minutes, until the cheese is fully melted.
  • Serve. Unwrap halfway, add pickles or onion if desired, and enjoy hot.

Equipment

  • Mixing Bowl
  • Spoon

Notes

  • Air fryer option: Warm the assembled sandwiches, unwrapped, at 350°F for 4 to 5 minutes, until the cheese melts.
  • Make ahead: Assemble the sandwiches, wrap in foil, and refrigerate for up to 1 day. Bake straight from the fridge at 350°F for 15 to 18 minutes.
  • Mild version: Use plain mayo instead of spicy mayo for kids or anyone sensitive to heat.
  • Storage: Refrigerate leftovers, wrapped, for up to 2 days. Reheat in foil at 350°F until warmed through.
  • About this copycat: Buc-ee's doesn't publish its recipe, so this version is based on what fans report from the hot case. Ingredients may vary by location.
