Ingredients
6ozground breakfast sausage, about 1/3 lb, cooked and crumbled
4largeeggs, beaten
1cupfrozen shredded hash browns, thawed
1/2cupshredded cheddar cheese
1/4cupdiced onion
1/4teaspoonsalt
1/8teaspoonblack pepper
Instructions
In a skillet over medium heat, cook the ground sausage until browned and cooked through, about 5–7 minutes. Drain excess fat and set aside.
Lightly grease two small oven-safe bowls or ramekins with cooking spray or oil.
Divide the thawed shredded hash browns evenly between the bowls, spreading into an even layer.
Sprinkle the cooked sausage and diced onion evenly over the hash browns.
Season the beaten eggs with salt and pepper, then pour evenly over the sausage and hash brown layers in each bowl.
Sprinkle shredded cheddar cheese evenly on top.
Place the bowls carefully into the air fryer basket. Cook at 350°F (175°C) for 10–12 minutes, or until eggs are fully set and cheese is melted and bubbly.
Carefully remove from the air fryer. Let cool for a minute, garnish with chopped green onions if desired, and serve warm.
