Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
Mix the dry ingredients – In a large mixing bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon salt, 1 teaspoon cinnamon, ½ teaspoon nutmeg, and ¼ teaspoon cloves until well combined.
Combine the wet ingredients – In another large bowl, whisk together 1 cup granulated sugar, ½ cup packed brown sugar, 1 cup pumpkin puree, ½ cup vegetable oil, 2 large eggs, and 1 teaspoon vanilla extract until smooth.
Bring it together – Slowly add the dry mixture into the wet mixture, stirring gently with a spatula until just combined. Do not overmix—this keeps the bread tender.
Bake – Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
Cool and serve – Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
