This Bob Evan’s Potato Recipe brings you the same delicious diced potatoes you love from the restaurant, right at home. With simple ingredients and rich flavor, it’s the perfect side dish for any dinner.

6cupspotatoes, diced
1mediumonion, diced
1mediumbell pepper, diced
1 1/2teaspoonssalt,
1teaspoonblack pepper,
2tablespoonsolive oil,
1teaspoongarlic powder,
Instructions
Dice 6 cups potatoes into small, even cubes. Toss them with a 2 tablespoons olive oil, 1 1/2 teaspoons salt, 1 teaspoon black pepper and 1 teaspoon garlic powder.
Set your air fryer to 400°F (200°C) and let it warm up for about 3-5 minutes.
Place the seasoned potatoes in the air fryer basket in a single layer (work in batches if needed). Air fry for 15-20 minutes, shaking the basket every 5 minutes to ensure even cooking and crispiness.
At the 10-minute mark, toss in chopped 1 medium onion and 1 medium bell pepper mixing them with the potatoes for the last 5-10 minutes of cooking.
Once potatoes are golden and crispy and veggies are tender, remove from the air fryer. Adjust salt and pepper to taste, then serve hot.
