Description

Sweet, buttery brown sugar glazed carrots just like Bob Evans, ready in 20 minutes on the stovetop or in the air fryer.

Ingredients

  • 1 pound baby carrots
  • 3 tablespoons unsalted butter
  • 1/4 cup packed dark brown sugar
  • 1/4 teaspoon kosher salt
  • 1/4 cup water, stovetop method only
  • 1 tablespoon chopped fresh parsley, optional

Instructions

Stovetop:

  • Melt the butter in a large skillet over medium heat.
  • Add the carrots, brown sugar, salt, and water. Stir to coat.
  • Cover and simmer for 10 minutes, stirring once or twice.
  • Uncover and cook 5 to 8 minutes more, stirring often, until the carrots are fork-tender and the glaze is thick and glossy.
  • Garnish with parsley and serve warm.

Air Fryer:

  • Preheat the air fryer to 375°F for 3 to 5 minutes.
  • Toss the carrots with the melted butter, brown sugar, and salt. Do not add water.
  • Air fry in a single layer for 12 to 15 minutes, shaking halfway, until tender and lightly browned.
  • Toss with any glaze left in the bowl, garnish, and serve.

Equipment

  • Large skillet with lid, or an air fryer
  • Mixing Bowl

Notes

  • Every air fryer runs a little differently, so start checking at 10 minutes.
  • For whole carrots, peel and cut into even 2-inch pieces.
