This copycat Bob Evans candied bacon recipe turns thick-cut hardwood-smoked bacon and brown sugar into sweet, smoky, glossy strips just like the restaurant's. Two ingredients, one sheet pan, ready in 30 minutes.
Ingredients
1lbthick-cut hardwood-smoked bacon
1/2cuppacked light or dark brown sugar
1/4teaspoonblack pepper, optional
1pinchcayenne pepper, optional
Instructions
Preheat the oven to 375°F (190°C). Line a rimmed baking sheet with foil and set a wire rack on top, if using.
Arrange the bacon strips in a single layer. They can touch but shouldn't overlap.
Sprinkle the brown sugar evenly over each strip and press it lightly so it sticks. Add black pepper or cayenne now, if using.
Bake for 20 to 25 minutes, until the bacon is deep mahogany and the sugar is bubbling. Start checking at 18 minutes so the sugar doesn't burn.
Transfer to a wire rack or parchment and cool for 5 minutes. The glaze firms up and the bacon crisps as it cools.

Don't use paper towels: The glaze will stick. Cool on a rack or parchment instead.
Air fryer: Cook in a single layer on a perforated parchment liner at 350°F for 8 to 10 minutes, checking at 7.
Storage: Refrigerate in an airtight container for up to 4 days.
Reheating: Warm at 350°F in the oven for 5 minutes or in the air fryer for 2 to 3 minutes. Avoid the microwave, which makes the glaze chewy.
