Description

Make Benihana-style Garlic Chicken Cauliflower Fried Rice at home with this easy, low-carb copycat recipe. Healthy, flavorful, and ready in under 30 minutes.

Ingredients 

Benihana Garlic Chicken Cauliflower Fried Rice Ingredients:

  • 2 teaspoon soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons rice wine vinegar
  • ¼ teaspoon fresh ground black pepper
  • 1 ½ cups frozen riced cauliflower, fully thawed and pat dry with paper towels (see note)
  • 1 eggs, beaten
  • 1 cup frozen vegetables, your choice (pictured: peas, carrots, corn, green beans)
  • 1/2 cup chicken, cooked, and diced.

Sauce Ingredients:

  • 2 tablespoons soy sauce
  • 2 teaspoons red sweet hot chili sauce
  • 1 teaspoon hoisin

Instructions

  • If air fryer requires preheating, preheat to 350 degrees F, for 3-5 minutes.
  • Combine 2 teaspoon soy sauce,1 tablespoon sesame oil, 2 teaspoons rice wine vinegar, and ¼ teaspoon fresh ground black pepper together in a medium—sized bowl and whisk together until thoroughly combined.
  • Add soy sauce mixture to 1 ½ cups frozen riced cauliflower and pour into a 6 or 7-inch round cake pan or other air fryer-safe pan.
  • Place the pan with the rice mixture into the air fryer and set cook time for 8-10 minutes, stirring after five minutes.
  • When the timer completes add 1 eggs over the rice and cook for another 4-6 minutes, or until the eggs are no longer runny. Stir in the 1/2 cup chicken.
  • Add the 1 cup frozen vegetables and stir well, cooking until hot – or about three minutes.   Serve immediately with or without sauce.  

For additional Sauce (shown served on the side):

  • Place 2 tablespoons soy sauce, 2 teaspoons red sweet hot chili sauce, and 1 teaspoon hoisin in a small bowl or dish individually and serve with the fried rice. You can also add some of this to the cauliflower fried rice as it cooks for an extra hit of flavor.

Note: - you can use fresh riced cauliflower as well; be sure to rinse well and pat dry
