Description

Ingredients 

  • 2 Cornish hens,
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 1/3 cup olive oil
  • 1 tablespoon garlic, minced
  • 2 teaspoons lemon zest, grated
  • 1/3 cup lemon juice,
  • 1 tablespoon rosemary, diced
  • 1 lemon, halved

Instructions

  • Pat 2 Cornish hens dry with paper towels.
  • Rub the hens all over with 1 teaspoon Kosher salt and 1/2 teaspoon black pepper .
  • In a small bowl, mix o1/3 cup olive oil, 1 tablespoon garlic, grated 2 teaspoons lemon zest, f1/3 cup lemon juice, and 1 tablespoon rosemary.
  • Rub the mixture all over the hens, making sure to coat evenly. Let them sit for at least 30 minutes, or refrigerate for a few hours for deeper flavor.
  • Preheat your oven to 450°F (230°C).
  • Place the hens on a roasting pan. Halve 1 lemon and place inside each hen. Roast for 45–55 minutes, or until the skin is golden and the juices run clear.
  • Remove hens from the oven and let rest for 5–10 minutes.
