Ingredients
2tablespoonsbutter
1/4cupsliced almonds
1/4cuponion, finely chopped
1cupLong grain white rice
2cupschicken broth
1teaspoonsalt, to taste
1teaspoonparsley, optional, chopped
Instructions
Set your Instant Pot to Sauté mode. Add2 tablespoons butter and melt. Stir in 1/4 cup sliced almonds and toast until golden brown, about 2–3 minutes.
Add 11/4 cup onion and cook until softened, about 2–3 minutes.
Stir in 1 cup Long grain white rice and toast for 1 minute.
Pour in 22 cups chicken broth and a 1 teaspoon salt. Scrape the bottom to release any browned bits.
Lock the lid and set the valve to sealing. Pressure cook on High for 4 minutes. Allow a 10-minute natural release, then quick release any remaining pressure.
Fluff the rice with a fork and garnish with 1 teaspoon parsley if desired.
