Description

Make this Air Fryer Zucchini Pumpkin Quick Bread for a moist, flavorful loaf packed with zucchini, pumpkin, warm spices, and crunchy walnuts. Perfect for breakfast, snacks, or dessert!

Ingredients 

  • 3 large eggs
  • 2 cups sugar
  • 1 cup pumpkin puree
  • 1 cup butter
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 cup shredded zucchini
  • 1 cup walnuts, crushed

Instructions

  • Mix the 2 cups sugar and 1 cup butter in a large mixing bowl, then mix in the 1 cup pumpkin puree, 3 large eggs, and 2 teaspoons vanilla extract.
  • Mix in the 3 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon salt 1 teaspoon ground nutmeg, and 1 teaspoon ground cinnamon
  • Mix well.
  • Fold in the 1 cup shredded zucchini
  • Fold in the 1 cup walnuts.
  • Pour the batter into a greased air fryer-safe pan.
  • Set the pan into the air fryer, and set the air fryer temperature to 320 degrees F, air fryer setting, and set cook time for 20-25 minutes.
  • Let cool slightly before slicing.
