Easy Air Fryer Zucchini Muffins – soft, moist muffins packed with fresh zucchini. Quick and simple to make, perfect for breakfast, snacks, or a healthy treat.

1cupgrated zucchini
1 1/2cupsall-purpose flour
2largeeggs
1/2cupgranulated sugar
1/3cupvegetable oil , or melted butter
2teaspoonsbaking powder
1teaspoonground cinnamon

Instructions
Preheat your air fryer temperature to 350 degrees F (180°C) for a few minutes while you prepare the muffin batter.
In a large mixing bowl, combine the 1 cup grated zucchini1 1/2 cups all-purpose flour, 2 large eggs, 1/2 cup granulated sugar, 1/3 cup vegetable oil or melted butter, 2 teaspoons baking powder, 1 teaspoon ground cinnamon, and a Pinch of salt Mix until well combined and the batter is smooth.
Line the muffin cups of your air fryer basket with paper liners or silicone liners. Fill each muffin cup about two-thirds full with the batter.
Place the filled muffin cups in the air fryer basket, making sure they are not overcrowded. Set cook time for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Once the muffins are baked, carefully remove them from the air fryer basket and transfer them to a wire rack to cool. Allow them to cool for a few minutes before serving.
