Description

Easy Air Fryer Zucchini Muffins – soft, moist muffins packed with fresh zucchini. Quick and simple to make, perfect for breakfast, snacks, or a healthy treat.

Ingredients 

  • 1 cup grated zucchini
  • 1 1/2 cups all-purpose flour
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil , or melted butter
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  • Preheat your air fryer temperature to 350 degrees F (180°C) for a few minutes while you prepare the muffin batter.
  • In a large mixing bowl, combine the 1 cup grated zucchini 1 1/2 cups all-purpose flour, 2 large eggs, 1/2 cup granulated sugar, 1/3 cup vegetable oil or melted butter, 2 teaspoons baking powder, 1 teaspoon ground cinnamon, and a Pinch of salt Mix until well combined and the batter is smooth.
  • Line the muffin cups of your air fryer basket with paper liners or silicone liners. Fill each muffin cup about two-thirds full with the batter.
  • Place the filled muffin cups in the air fryer basket, making sure they are not overcrowded. Set cook time for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Once the muffins are baked, carefully remove them from the air fryer basket and transfer them to a wire rack to cool. Allow them to cool for a few minutes before serving.
