Air Fryer Zucchini Brownies

Description

Moist, cake-style chocolate zucchini brownies baked in the air fryer at 330°F and finished with a two-ingredient chocolate peanut butter frosting. A great way to use up summer zucchini.

Ingredients 

Brownies

  • 1 cup butter, room temperature
  • cups granulated sugar
  • 2 large eggs
  • ½ cup plain yogurt
  • 1 teaspoon pure vanilla extract
  • cups all-purpose flour
  • ¼ cup unsweetened baking cocoa
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 cups shredded zucchini, lightly blotted

Frosting

  • cup semisweet chocolate chips
  • ½ cup creamy peanut butter

Instructions

  • Shred the zucchini on the large holes of a box grater, skin on. Blot between paper towels to remove surface liquid — do not wring it dry. Measure 2 cups.
  • In a large bowl, cream the butter and sugar together until pale and fluffy, 2 to 3 minutes.
  • Beat in the eggs, yogurt, and vanilla until well combined.
  • In a separate bowl, whisk together the flour, cocoa, baking soda, and salt.
  • Add the dry mixture to the wet in two or three additions, mixing just until no flour streaks remain. Do not overmix.
  • Fold in the shredded zucchini by hand.
  • Grease your pan with cooking spray or line it with parchment. Spread the batter evenly into the pan.
  • Air fry at 330°F for 30 to 40 minutes, until a toothpick inserted in the center comes out with a few moist crumbs. Begin checking at 30 minutes.
  • Cool in the pan on a wire rack.
  • For the frosting, combine the chocolate chips and peanut butter in a small saucepan over low heat, stirring until smooth.
  • Spread the frosting over the cooled brownies and let set completely, about 1 hour, before slicing into 16 squares.

Notes

Bake time varies significantly between air fryer models and pan materials. A thin metal pan bakes faster and more evenly than ceramic or glass. Leave at least an inch of clearance around the pan for airflow. To bake conventionally, use 350°F for 35 to 45 minutes in a 9x13 pan.
