Description

These Air Fryer Weight Watchers Red Potatoes are crispy on the outside and tender on the inside. A simple, healthy side dish with minimal oil, perfect for quick weeknight dinners or meal prep.

Ingredients 

  • 4 large red potatoes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced

Instructions

  • Preheat air fryer to 400 degrees F, air fryer setting, for 3-5 minutes.
  • Chop 4 large red potatoes into 4 (makes about 1-1/2” chunks)
  • Add the potatoes to a re-sealable bag along with 1 tablespoon extra virgin olive oil, 1 teaspoon sea salt, 1/2 teaspoon black pepper, and 2 cloves garlic and move the potatoes around in there to get nice and coated evenly.
  • Spray the air fryer basket with cooking oil. Add the potatoes in a single layer in the air fryer basket.
  • Set cook time for 18-20 minutes and serve immediately while they’re hot.
