These Air Fryer Weight Watchers Red Potatoes are crispy on the outside and tender on the inside. A simple, healthy side dish with minimal oil, perfect for quick weeknight dinners or meal prep.
Ingredients
4large red potatoes
1tablespoonextra virgin olive oil
1teaspoonsea salt
1/2teaspoonblack pepper
2clovesgarlic, minced
Instructions
Preheat air fryer to 400 degrees F, air fryer setting, for 3-5 minutes.
Chop 4 large red potatoes into 4 (makes about 1-1/2” chunks)
Add the potatoes to a re-sealable bag along with 1 tablespoon extra virgin olive oil, 1 teaspoon sea salt, 1/2 teaspoon black pepper, and 2 cloves garlic and move the potatoes around in there to get nice and coated evenly.
Spray the air fryer basket with cooking oil. Add the potatoes in a single layer in the air fryer basket.
Set cook time for 18-20 minutes and serve immediately while they’re hot.
