Ingredients
2cupszucchini, shredded
¼cuponions, diced
½cupbreadcrumbs
2largeeggs
1teaspoonsalt , & more for shredded zucchini
¼teaspooncayenne pepper
Optional: Hamburger Buns, Brioche Buns, Lettuce, Red Onions, Tomatoes
Instructions
Use a vegetable peeler or food grater and grate your zucchini.
Then spread it over paper towels, sprinkle with some salt, and wait for about 10 to 15 minutes. The water will appear on top of the zucchini. Blot with paper towels to remove the moisture.
In a large mixing bowl, add the zucchini, onions, bread crumbs, eggs, salt, and cayenne pepper. Mix well to form a mixture. If you need more bread crumbs, add them. You want them to stay together.
Shape the zucchini mixture into burger shapes. Spray your Air Fryer Basket with cooking spray, and then add your burgers. (Alternative you can use a silicone air fryer liner) set the temperature to 350 degrees F, air fryer setting, for 7 to 10 minutes. Flip halfway during the cooking process.
Add to a hamburger or brioche bun, and add your toppings.
