Air Fryer Vegetable Tempura has always been one of my favorite go-to dishes to enjoy. Whether served as an appetizer or a side dish, it's full of flavor and sure to please the palate.
Ingredients
1cupall-purpose flour
1teaspoonkosher salt, 1/2
1/2teaspoonblack pepper
2largeseggs
2tablespoonswater
1cuppanko breadcrumbs
2teaspoonsvegetable oil, or canola oil
Assorted Vegetables: You will need 3 cups
1/2cupgreen beans, whole
1/2cupasparagus spears, whole
1/2cupred onions, rings
1/2cupbell peppers, cut
1/2cupavocado, wedges
1/2cupzucchini slices
Instructions
Cut your vegetables up, then use a paper towel to dry the vegetables. Mix together the dry ingredients, flour, salt, and black pepper in a shallow dish. In another large bowl, whisk together eggs and water. Stir together panko and oil in a third shallow dish.
Dip in flour mixture, then in egg mixture, and finally in panko mixture to coat. Allow any excess batter to drip off—the vegetable piece.
Preheat the air fryer to 400 degrees F for 3-5 minutes. Transfer vegetables to the air fryer basket in a single layer, and set the cooking time for 8-10 minutes; remove when golden brown.
Serve with a sprinkle of additional salt, serve with a soy sauce dipping sauce, and sliced green onions.
