Dip each cutlet into the flour, coating evenly. Shake off excess.
Next, dip into the beaten eggs, letting excess drip off.
Finally, coat with the breadcrumb mixture, pressing gently to adhere.
Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
Place breaded veal cutlets in a single layer in the air fryer basket.
Lightly spray the tops with olive oil spray.
Air fry for 6 minutes, then flip and spray the other side.
Continue cooking for another 5-6 minutes or until golden brown and crispy.
Transfer to a plate and garnish with fresh parsley and lemon wedges.
