A light, fluffy single-serving vanilla cake baked right in the mug, finished with a simple powdered sugar glaze. Seven pantry ingredients, ten minutes start to finish.
Ingredients
Cake:
1tablespoonbutter, melted
1large egg
2tablespoonsbrown sugar
1teaspoonpure vanilla extract
1tablespoonlight cream
5tablespoonsall-purpose flour
1teaspoonbaking powder
Icing:
2tablespoonspowdered sugar
1teaspoonwater
Optional: sprinkles
Instructions
In a small mixing bowl, whisk together the melted butter, egg, brown sugar, vanilla extract, and light cream until smooth.
Add the flour and baking powder. Mix just until combined — do not overmix.
Spray a 12- to 16-ounce oven-safe mug or ramekin with non-stick cooking spray.
Pour the batter into the mug, filling no more than two-thirds full.
Place the mug into the air fryer basket. Set to 350°F on the air fry setting for 4 to 5 minutes, until a toothpick inserted in the center comes out clean.
Let cool for at least 3 minutes.
Whisk the powdered sugar and water until smooth. Drizzle over the cooled cake, add sprinkles if desired, and serve.
