Description

Air Fryer Tuscan Chicken Thighs are crispy on the outside, juicy on the inside, and bursting with garlic, Italian herbs, and sun-dried tomato flavor—an easy 30-minute dinner everyone will love!

Ingredients 

Chicken Ingredients:

  • 4 boneless, skinless chicken thighs, or boneless, skinless chicken breasts
  • 2 tablespoon olive oil
  • 2 tablespoon Tuscan seasoning, or Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon black pepper, to taste

Potato Ingredients:

  • 4 medium potatoes, diced (Russet or Yukon Gold)
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon black pepper, to taste

For the Veggies:

  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon black pepper, to taste

Instructions

  • In a small bowl, mix olive oil, Tuscan seasoning, garlic powder, paprika, salt, and black pepper.
  • Rub the mixture over the chicken thighs or breasts, ensuring they are well coated.
  • In a large bowl, toss the diced potatoes with olive oil, rosemary, thyme, salt, and black pepper until evenly coated.
  • Preheat the air fryer to 400°F (200°C) for 5 minutes.
  • Place the seasoned chicken in the air fryer basket and cook at 400°F (200°C) for 10 minutes.
  • Add the seasoned potatoes to the basket with the chicken. Cook for an additional 15-20 minutes, shaking the basket halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are crispy and tender.
  • While the chicken and potatoes are cooking, toss the sliced bell pepper, zucchini, and cherry tomatoes with olive oil, dried basil, oregano, salt, and black pepper.
  • In the last 5 minutes of cooking, add the veggies to the air fryer basket with the chicken and potatoes. Shake the basket gently to combine and cook until the veggies are tender and slightly charred.
  • Remove the chicken, potatoes, and veggies from the air fryer.
  • Serve immediately, garnished with fresh herbs if desired.
