Description

Make a complete, healthy meal in under 20 minutes! This Air Fryer Turkey Sausage Meatballs and Squash recipe is a delicious one-pan wonder.

Ingredients 

  • 3 tablespoon butter
  • ½ teaspoon rosemary
  • ½ teaspoon thyme
  • ½ teaspoon sage
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 small butternut squash, cubed
  • 1 medium onion, sliced
  • ½ pound mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 pound turkey sausage
  • 1 large egg
  • ½ cup plain breadcrumbs

Instructions

  • Melt butter in a medium mixing bowl and stir in half of the herbs, salt, and pepper.
  • Add vegetables and stir to coat.
  • Place on air fryer racks and cook at 400 degrees for 8 minutes.
  • Meanwhile, combine sausage, egg, breadcrumbs, garlic, and remaining herbs and spices in the same mixing bowl.
  • Use a cookie scoop and your hands to form about two dozen 1.5” meatballs.
  • Place over vegetables and return to air fryer. Cook at 400 degrees for about 12 minutes or until meatballs are temp at 165 degrees.
