Description

Crispy mini taco bowls filled with homemade-seasoned ground beef and cheese, air fried until golden, then topped with fresh lettuce, pico de gallo, and cilantro lime sour cream. An easy 30-minute appetizer for taco night, parties, and game day.

Ingredients 

Taco Cups

  • 1 lb ground beef
  • ¼ cup sofrito
  • 2 boxes mini taco bowls, 12 bowls per box
  • ½ cup shredded Mexican cheese
  • 1 cup shredded iceberg lettuce
  • Pico de gallo or salsa of choice
  • Fresh cilantro, for garnish
  • 1 tbsp olive oil, for browning the beef

Taco Seasoning

  • 1 tsp ancho chili powder
  • ½ tsp chili powder
  • 1 tsp cumin
  • ½ tsp dried cilantro
  • ½ tsp smoked paprika
  • ½ tsp sea salt
  • ¼ tsp minced onions
  • ¼ tsp garlic powder
  • ¼ tsp tarragon
  • ¼ tsp white pepper

Cilantro Lime Sour Cream

  • cup sour cream
  • 3 tbsp fresh chopped cilantro
  • 2 limes, juiced
  • 1 tsp cracked peppercorn
  • 2 garlic cloves
  • 1 jalapeño, seeded and diced

Instructions

  • Prepare the taco seasoning. Combine all seasoning ingredients in a small bowl and mix.
  • Brown the ground beef. Heat a frying pan over medium-high heat. Add 1 tablespoon olive oil and swirl to coat. Add the ground beef and break it into small pieces. After 1 minute, add the taco seasoning. Continue browning for 5 minutes. Pour in the sofrito, lower the heat, and simmer for 5 minutes.
  • Preheat the air fryer to 390 degrees F for 5 minutes.
  • Fill the taco bowls. Add about 3 tablespoons of taco meat to each bowl and top with a pinch of cheese.
  • Air fry. Place the taco bowls into the air fryer in a single layer and cook for 5 minutes.
  • Make the cilantro lime sour cream. While the cups cook, add all sour cream ingredients to a food processor and puree for 15 seconds. Transfer to a mason jar or squeeze bottle.
  • Top and serve. Remove the taco cups from the air fryer. Top with shredded lettuce, pico de gallo, and cilantro lime sour cream. Garnish with cilantro and enjoy!

Notes

Notes: Add cold toppings only after air frying. Cook in batches if all the bowls won't fit in a single layer. Reheat leftovers in the air fryer at 350 degrees F for 3 to 4 minutes. Nutrition will vary based on the brand of taco bowls and toppings used — add your calculated nutrition facts here.
