Description

Air Fryer Stuffed Chicken with Asparagus -- Ever since I started cooking with an air fryer, the food has been incredible. From crispy bacon to juicy chicken breasts, you can do it without any oil and in a fraction of the time! This recipe is perfect for lunch or dinner and will only take you 20 minutes from start to finish.

Ingredients 

  • 4 boneless, skinless chicken breasts
  • 8 slices prosciutto
  • 4 ounces fontina chees, cut into 4 slices
  • 2 pounds asparagus, trimmed
  • 2 shallots, halved and sliced thin

Instructions

  • Start with 4 boneless, skinless chicken breasts. Pound them to an even thickness for uniform cooking if they are thick.
  • Season the chicken breasts with a bit of salt and pepper, considering that prosciutto adds saltiness.
  • Lay 2 slices of prosciutto flat on a surface, slightly overlapping. Place a slice of fontina cheese on each chicken breast, then wrap the chicken with the prosciutto slices, ensuring the cheese is enclosed.
  • Trim the ends of 2 pounds of asparagus and cut them into lengths that will fit your air fryer basket.
  • Thinly slice 2 shallots and mix them with the asparagus. Drizzle a bit of olive oil and toss with salt and pepper.
  • Preheat your air fryer to 375°F (190°C).
  • Place the prosciutto-wrapped chicken in the air fryer basket. Cook for 10 minutes.
  • After 10 minutes, add the asparagus and shallots around the chicken in the air fryer.
  • Continue cooking for another 10-15 minutes, or until the chicken's internal temperature reaches 165°F (74°C) and the asparagus is tender.
  • Once cooked, let the chicken rest for a few minutes before serving.
  • Serve the prosciutto-wrapped chicken alongside the roasted asparagus and shallots.
