Description

Air Fryer Street Corn Carnitas Flatbread — crispy naan topped with tender pork carnitas, roasted corn, melted cheese, and a creamy elote-style crema. Ready in 10 minutes.

Ingredients 

Flatbread

  • 2 naan bread
  • 10 ounces pork carnitas, cooked and shredded
  • 15 ounces Mexican roasted corn, thawed and well drained
  • 1 cup mozzarella cheese, shredded
  • ¼ cup cotija cheese, crumbled

Street Corn Crema

  • cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chili powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon kosher salt

For Topping

  • 1 avocado, diced
  • ½ cup cherry tomatoes, quartered
  • ¼ cup red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  • In a small bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and salt until smooth. Set aside.
  • In a large mixing bowl, combine the drained corn, shredded carnitas, and mozzarella. Stir in about two-thirds of the crema until evenly coated. Reserve the remaining crema.
  • Divide the topping between the two pieces of naan, leaving a ½-inch border around the edges. Press down gently.
  • Preheat the air fryer to 330 degrees F for 2 to 3 minutes.
  • Place the flatbread in the air fryer basket. Cook at 330 degrees F for 3 to 5 minutes, until the cheese has melted and the edges are golden. Work in batches if needed.
  • Let rest 1 minute. Top with avocado, tomatoes, red onion, and cilantro. Drizzle with reserved crema, crumble cotija over the top, and serve with lime wedges.

Notes

  • Drain the corn thoroughly — excess moisture is the main cause of soggy flatbread.
  • For extra crisp, toast the bare naan in the air fryer for 30 to 60 seconds before adding the topping.
  • Add the avocado, tomato, and onion after cooking, not before.
