Air Fryer Steak 'n Shake Beef Tallow Fries (Copycat)

Description

Thin, crispy shoestring fries tossed in beef tallow for that rich, drive-thru flavor, made easy in the air fryer.

Ingredients 

  • 2 large russet potatoes, about 1.5 lb
  • 2 to 3 tablespoons beef tallow, melted (grass-fed or Wagyu)
  • 1 tablespoon cornstarch
  • 1 teaspoon fine salt, or to taste

Instructions

  • Cut the potatoes into 1/4-inch shoestring fries.
  • Soak in cold water for at least 30 minutes.
  • Drain and pat completely dry.
  • Toss with cornstarch, then with melted beef tallow.
  • Preheat the air fryer to 380°F.
  • Air fry in a single layer for 15 to 18 minutes, shaking every 5 minutes.
  • Increase to 400°F and cook 2 to 4 minutes more until golden and crisp.
  • Season with salt immediately and serve hot.

Notes

  • Cook in batches for the crispiest results.
  • For spicy fries, season with Copycat Steak 'n Shake Cajun Seasoning instead of plain salt.
  • Reheat leftovers in the air fryer at 375°F for 3 to 5 minutes.
