Air Fryer Starbucks Blueberry Streusel Muffins

Description

Soft, vanilla-scented blueberry muffins with a buttery cinnamon streusel topping — a copycat of the Starbucks Blueberry Streusel Muffin, made in the air fryer with no oven required.

Ingredients 

Cinnamon streusel topping

  • 1/3 cup all-purpose flour
  • 1/3 cup packed light brown sugar
  • 3/4 tsp ground cinnamon
  • 3 tbsp cold unsalted butter, cubed

Muffins

  • 2 cups all-purpose flour, plus 1 tbsp for the berries
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup neutral oil
  • 1/4 cup unsalted butter, melted
  • 2 large eggs, room temperature
  • 3/4 cup whole milk
  • 2 tsp vanilla extract
  • 1/2 tsp lemon zest, optional
  • 1 1/2 cups blueberries, fresh or frozen

Instructions

  • Make the streusel: rub the flour, brown sugar, cinnamon, and cold butter together with your fingertips until crumbly with some pea-sized pieces. Refrigerate until needed.
  • Whisk the flour, sugar, baking powder, and salt together in a large bowl.
  • Toss the blueberries with 1 tbsp of the flour mixture in a small bowl and set aside.
  • In a separate bowl, whisk the oil, melted butter, eggs, milk, vanilla, and lemon zest until smooth.
  • Pour the wet ingredients into the dry and fold just until no dry flour remains. The batter will be lumpy — do not overmix.
  • Gently fold in the floured blueberries.
  • Fill silicone muffin cups three-quarters full. Top each with a heaped tablespoon of streusel and press lightly.
  • Preheat the air fryer to 320°F. Arrange 4 to 6 muffins in the basket with space between them.
  • Air fry for 14 to 16 minutes, until a toothpick inserted in the center comes out with a few moist crumbs. Add 2 minutes if using frozen blueberries.
  • Cool in the basket for 2 minutes, then transfer to a wire rack. Repeat with remaining batter.

Notes

  • Frozen blueberries: add them frozen, do not thaw, and still toss them in flour.
  • Oven method: bake at 375°F for 18–22 minutes in a standard muffin tin.
  • If the streusel browns too fast: tent loosely with foil for the last 5 minutes.
  • Storage: airtight at room temperature up to 3 days, or frozen up to 3 months. Reheat from frozen in the air fryer at 300°F for 3 minutes.
