Preheat your air fryer to 320°F (160°C) for 3–5 minutes.
Lightly grease 3–4 silicone muffin cups or small ramekins.
In a medium bowl, whisk together 1 cup all-purpose flour, 1/2 cup granulated sugar, 1 teaspoon baking powder 1/4 teaspoon salt, and 1 teaspoon ground cinnamon until well combined.
In another bowl, whisk together 1/4 cup vegetable oil 1/4 cup milk 1 large egg, and 1 teaspoon pure vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
Gently fold in the 1/2 cup cinnamon chips, ensuring they are evenly distributed.
Divide the batter evenly among the prepared muffin cups, filling about 2/3 full.
Place the muffin cups in the air fryer basket. Cook at 320°F (160°C) for 10–12 minutes, or until a toothpick inserted comes out clean.
Let the muffins cool for 5 minutes before removing them from the cups.
