Description

Crispy, sesame-topped homemade shrimp toast made from scratch in the air fryer — a fresh take on the classic dim sum appetizer, with none of the deep-frying mess.

Ingredients 

  • lb raw shrimp, peeled and deveined
  • 1 egg white
  • 1 tablespoon cornstarch
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon soy sauce, or 1 teaspoon fish sauce
  • 1 teaspoon fresh grated ginger
  • 1 cloves garlic, minced
  • 2 green onions, finely chopped
  • ½ teaspoon sugar
  • ¼ teaspoon white pepper
  • ½ teaspoon salt
  • 4 slices white sandwich bread, crusts removed
  • Sesame seeds, for coating

Instructions

  • Pat the shrimp very dry. Add to a food processor with the egg white, cornstarch, sesame oil, soy sauce, ginger, garlic, sugar, white pepper, and salt. Pulse to a coarse paste. Stir in the green onions.
  • Trim the crusts from the bread. Spread the shrimp paste thickly and evenly over each slice.
  • Press the shrimp side firmly into a plate of sesame seeds to coat. Cut each slice into 4 triangles.
  • Preheat the air fryer to 375°F (190°C). Arrange the toasts shrimp-side up in a single layer and mist lightly with oil.
  • Air fry for 8 to 10 minutes, until golden and the shrimp is opaque and cooked through.
  • Serve hot with your favorite dipping sauce.

Notes

  • Use day-old bread for the crispiest result.
  • Pat the shrimp very dry so the paste isn't watery.
  • Cook in a single layer, in batches if needed.
  • To freeze: assemble uncooked, freeze flat, then air fry from frozen, adding a few minutes.
