Description

Soft, creamy scrambled eggs in the air fryer at 300°F, with a stir every 2 minutes so they never turn rubbery.

Ingredients

  • 4 large eggs
  • 1 tablespoon milk, or half-and-half. optional
  • 1 tablespoon butter, unsalted
  • ¼ teaspoon kosher salt, to taste
  • ⅛ teaspoon black pepper, to taste

Instructions

  • Put the butter in a 6-inch oven-safe pan, set it in the air fryer basket, and preheat at 300°F (150°C) for 1 minute until melted.
  • Whisk the eggs, milk, salt and pepper for about 20 seconds, until smooth.
  • Swirl the butter to coat the pan, pour in the eggs, and cook at 300°F for 2 minutes.
  • Push the set edges toward the center with a spatula. Cook 2 more minutes.
  • Stir again to break up set patches. Cook 1 to 2 minutes, until just set but still glossy.
  • Remove right away; the hot pan finishes them. Serve immediately.

Equipment

  • 6-inch round cake pan (or skip it if your air fryer has a glass basket)
  • Silicone spatula

Notes

  • 2 eggs: 4–5 minutes in a 4-inch ramekin. 6 eggs: 7–8 minutes. 8 eggs: 9–10 minutes, stirring every 2 minutes.
  • Add cheese, cooked meat or sautéed vegetables after the first stir.
  • If your air fryer runs hot, use 280°F (140°C) and add 1 minute.
