Roll out the 2 sheets puff pastry onto a lightly floured wooden cutting board. Use a pizza cutter to cut 6 equal rectangular sections. Repeat with second puff pastry sheet.

Add 1/4 cup of the scrambled eggs and sausage to the center of each puff pastry round.
