Ingredients 

  • 2 salmon fillets, about 6 ounces each.
  • 1 cup bell peppers, sliced
  • 1 cup onion, sliced
  • 14 ounces tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon black pepper, to taste
  • 2 tablespoon Fresh basil, diced, for garnish

Instructions

  • In a bowl, mix bell peppers, onion, tomatoes, garlic, Italian seasoning, olive oil, salt, and pepper.
  • Preheat the air fryer to 400°F (200°C).
  • Place the vegetable mixture in the air fryer basket and cook for 5 minutes.
  • Add salmon fillets on top and cook for another 10 minutes until salmon is cooked through.
  • Garnish with fresh basil before serving.
