Air Fryer Roasted Vegetables are a quick, healthy side dish with perfectly crisp edges and tender centers. Ready in just minutes, they’re ideal for busy weeknights and pair well with almost any meal. Customize with your favorite veggies and seasonings for endless flavor combos!

Ingredients 

  • 1 medium carrot
  • 1 medium parsnip
  • 1 medium zucchini
  • 1 medium yellow squash
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Start by washing and drying the vegetables. Then peel the parsnips and carrots. Dice the parsnips, carrots, zucchinis, and yellow squash into the same size pieces, about 1 to 2 inches each.
  • Place the vegetables into a medium-sized bowl and add olive oil. Add your seasonings, garlic powder, salt, and pepper over the veggies. Mix the veggies until evenly coated with the oil and herbs.
  • Preheat your air fryer to 400°F, then add your vegetables and cook for 10 to 15 minutes, or until the vegetables are perfectly roasted.
