Description

Crispy air fryer roasted potatoes with juicy cherry tomatoes make a quick, easy, and flavorful side dish. Perfect for weeknight dinners, meal prep, or a simple snack.

Ingredients 

  • 1 medium red onion, peeled and diced
  • 8 large red potatoes, quartered
  • 1 pint tomatoes, cherry or grape
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons oil

Instructions

  • Preheat your air fryer temperature to 400 degrees F, for 3-5 minutes.
  • Then, wash your p8 large red potatoes and slice them into thin wedges. Next, add the potatoes to a bowl and drizzle them with 3 tablespoons oil.
  • Toss the potatoes with 1 teaspoon basil, 1 teaspoon oregano, 1 teaspoon rosemary, 1 teaspoon salt, and 1/2 teaspoon black pepper Once the potatoes are coated in oil and seasoning, transfer them to the air fryer basket and set cook time for 12-15 minutes.
  • When the potatoes are fork tender, add 1 pint tomatoes and1 medium red onion (cut into small pieces) and cook for an additional 5-7 minutes.
