Description

Delicious Air Fryer Raspberry Pie Bars with buttery, flaky crust and sweet-tart raspberry filling. Perfect for dessert, snacks, or sharing with family and friends.

Ingredients 

Crumb Bars:

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup shortening
  • 2 large eggs

Raspberry Filling:

  • 1/2 cup granulated sugar
  • 4 cups raspberries, fresh or frozen
  • 1 tablespoon cornstarch

Instructions

  • In a small bowl, mix the 3 cups all-purpose flour 1 cup granulated sugar, 1 teaspoon baking powder, and 1 teaspoon salt.
  • Then mix in the 1 cup shortening, and continue to mix until it’s crumbly.
  • Then add the 2 large eggs.
  • Press the crumb layer on the bottom of a greased pan.
  • In a small bowl, mix the 1/2 cup granulated sugar, 4 cups raspberries (either fresh or frozen), and 1 tablespoon cornstarch. Mix well, spread it out onto the crumble layer, and then sprinkle the rest of the crumb topping on top of the raspberry filling.
  • Place the dessert into the air fryer, 320 degrees F (air fryer setting) for the first 10 minutes and then another 10 minutes at 300 degrees F, air fryer setting.
  • Let cool slightly before serving.
