There is nothing like starting your morning off with a piece of homemade Air Fryer Raspberry Lemon Bundt Cake, so easy and absolutely delicious!
Ingredients
3cupsCake Flour
1/2teaspoonBaking Powder
1/2teaspoonBaking Soda
1/4teaspoonsalt
4Eggs
1 1/2cupsGranulated Sugar
1teaspoonPure Vanilla Extract
1cupUnsalted Butter
1cupGreek Yogurt-Plain
1cupFresh Raspberries
1tablespoonLemon Zest
Optional: Powdered Sugar
Instructions
In a large mixing bowl, cream together the butter and sugar.
Mix in the eggs, vanilla extract, and yogurt.
Add the cake flour, baking soda, baking powder, and salt.
Mix well.
Fold in the raspberries and lemon zest.
Spray your bundt pan with cooking spray.
Pour the batter into the prepared pan.
Set the pan into the air fryer and set the temperature to 330 degrees F for 20-25 minutes.
Check and make sure the cake is fully cooked; the exact time will depend on your air fryer and the pan you use. (Thicker pans will take longer to cook than thinner pans)
When the cake is cooled, dust with powdered sugar.
