Description

An easy, sophisticated air fryer rack of lamb coated in a garlic-herb crust and cooked until crisp outside and tender inside — perfect for impressing guests or elevating a weeknight dinner.

Ingredients 

  • 1 rack lamb, about 8 ribs, Frenched
  • 2 teaspoons olive oil
  • 1 teaspoon kosher salt, to taste
  • ½ teaspoon black pepper, to taste
  • 1 teaspoon garlic, minced (or garlic powder)
  • 1 teaspoon dried rosemary, or 1 tablespoon fresh
  • 1 teaspoon dried thyme, or 1 tablespoon fresh

Instructions

  • Preheat the air fryer to 400°F (200°C).
  • Trim excess fat from the rack and pat it dry with paper towels. Combine the garlic, salt, pepper, rosemary, and thyme in a small bowl.
  • Brush the rack all over with olive oil, then press the herb mixture into every surface.
  • Place the rack bone-side down in the basket and cook at 375°F (190°C) for 18–22 minutes, until it reaches your desired internal temperature (130–135°F for medium-rare).
  • Rest the lamb 5–10 minutes, then slice between the bones into individual chops and serve.
