An easy, sophisticated air fryer rack of lamb coated in a garlic-herb crust and cooked until crisp outside and tender inside — perfect for impressing guests or elevating a weeknight dinner.
Ingredients
1racklamb, about 8 ribs, Frenched
2teaspoonsolive oil
1teaspoonkosher salt, to taste
½teaspoonblack pepper, to taste
1teaspoongarlic, minced (or garlic powder)
1teaspoondried rosemary, or 1 tablespoon fresh
1teaspoondried thyme, or 1 tablespoon fresh
Instructions
Preheat the air fryer to 400°F (200°C).
Trim excess fat from the rack and pat it dry with paper towels. Combine the garlic, salt, pepper, rosemary, and thyme in a small bowl.
Brush the rack all over with olive oil, then press the herb mixture into every surface.
Place the rack bone-side down in the basket and cook at 375°F (190°C) for 18–22 minutes, until it reaches your desired internal temperature (130–135°F for medium-rare).
Rest the lamb 5–10 minutes, then slice between the bones into individual chops and serve.
