Thick brioche soaked in a real pumpkin custard and air fried until crisp at the edges and custardy in the center. A 20-minute fall breakfast.
Ingredients
8slicesbread, brioche or challah bread, ¾ to 1 inch thick (preferably day-old)
2largeeggs
½cuppumpkin puree, not pumpkin pie filling
⅔cupwhole milk
2tablespoonsbrown sugar
2teaspoonspumpkin pie spice
1teaspoonground cinnamon
1teaspoonpure vanilla extract
⅛teaspoonsalt
2tablespoonsunsalted butter, melted, plus more for the basket
Powdered sugar and maple syrup, for serving
Instructions
Whisk the eggs in a shallow dish until fully broken up. Add the pumpkin puree, milk, brown sugar, pumpkin pie spice, cinnamon, vanilla, and salt. Whisk until completely smooth.
Preheat the air fryer to 350°F (175°C). Grease the basket well with butter.
Soak each slice of bread in the custard for about 20 to 30 seconds per side, until saturated to the center. Lift out and let excess drip off.
Arrange the slices in a single layer in the basket, leaving space between them. Work in batches.
Air fry for 5 minutes.
Flip each slice, brush the tops with melted butter, and air fry another 3 to 5 minutes until deep golden brown and set in the middle.
Dust with powdered sugar and serve immediately with warm maple syrup.
