Description

A single-serving pumpkin coffee cake with a buttery brown-sugar streusel, baked in the air fryer in 12 minutes. One bowl, one ramekin, no oven required.

Ingredients 

Coffee Cake

  • 2 tablespoons unsalted butter, room temperature
  • 4 tablespoons granulated sugar
  • 4 tablespoons pumpkin purée
  • 1 teaspoon pure vanilla extract
  • ½ cup all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt, omit if using salted butter
  • ¼ teaspoon pumpkin pie spice
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

Streusel Topping

  • 2 tablespoons unsalted butter, cold
  • 4 tablespoons all-purpose flour
  • 2 tablespoons brown sugar

Instructions

  • In a small bowl, cream the softened butter and granulated sugar until pale and fluffy.
  • Stir in the pumpkin purée and vanilla extract until combined.
  • Add the flour, baking powder, salt, pumpkin pie spice, nutmeg, and cloves. Mix just until no dry flour remains — do not overmix.
  • Grease a 10 to 12 ounce ramekin or oven-safe mug and scrape in the batter. Fill no more than two-thirds full.
  • In the same bowl, rub the cold butter into the flour and brown sugar until it forms coarse, pea-sized crumbs. Scatter evenly over the batter without pressing down.
  • Place the ramekin in the air fryer basket. Cook at 320°F for 10 to 12 minutes, checking at 8 minutes. A toothpick inserted into the center should come out clean.
  • Let cool at least 5 minutes before eating.

  • Cooking spray or butter for greasing

Notes

  • Cooking time varies with the thickness of your vessel. Thick stoneware mugs may need up to 14 minutes; thin ramekins may finish at 9.
  • If the streusel browns before the cake sets, tent loosely with foil for the last few minutes.
  • Oven method: 350°F for 18 to 22 minutes.
  • Reheat leftovers in the air fryer at 300°F for 2 to 3 minutes to re-crisp the topping.
