Description

Soft, spiced pumpkin cookies made quickly from cake mix in the air fryer, perfect for an easy fall dessert or cozy snack.

Ingredients 

  • 1 cup pumpkin cake mix
  • ¼ cup pumpkin puree
  • 2 tablespoons melted butter
  • 1 large egg
  • ½ teaspoon ground cinnamon
  • teaspoon nutmeg, optional
  • ½ teaspoon pure vanilla extract
  • 2 tablespoons chocolate chips, optional

Instructions

  • In a large bowl, combine the 1 cup pumpkin cake mix, ¼ cup pumpkin puree, 2 tablespoons melted butter, and 1 large egg. Stir until a smooth, sticky dough forms.
  • Stir in c½ teaspoon ground cinnamon, ⅛ teaspoon nutmeg, ½ teaspoon pure vanilla extract and 2 tablespoons chocolate chips until evenly incorporated.
  • Preheat your air fryer to 350°F. Line the basket with parchment paper or lightly grease it to prevent sticking.
  • Use a cookie scoop or tablespoon to drop portions of dough into the basket, leaving space between each cookie for even cooking. Flatten each slightly with the back of the spoon.
  • Cook at 350°F for 6–8 minutes, or until cookies are set and lightly golden around the edges. Cooking times may vary depending on your air fryer.
  • Remove cookies from the air fryer and let them cool on a wire rack. This allows them to firm up slightly before serving.
