Description

These Air Fryer Pulled Pork Taquitos are crispy, flavorful, and packed with tender pulled pork and cheese. Perfect for a quick meal or snack, these taquitos are sure to be a hit with the whole family!

Ingredients 

  • 1 pound Pork Tenderloin , or Pork Shoulder
  • 8-10 small Tortillas, flour or corn
  • 1 cup shredded Cheese, cheddar, Monterey Jack, or queso fresco
  • 1/2 Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Paprika
  • Salt and Pepper to taste

Instructions

  • Cook the pork tenderloin or shoulder until tender. You can do this by roasting, slow cooking, or pressure cooking.
  • Shred the cooked pork using two forks and set aside.
  • In a large bowl, combine the shredded pork, chopped onion, minced garlic, shredded cheese, cumin, chili powder, paprika, salt, and pepper. Mix well to evenly distribute the spices and ingredients.
  • Warm the tortillas slightly to make them pliable (microwaving for 20 seconds helps).
  • Place about 2 tablespoons of the pork mixture on one end of each tortilla, then tightly roll them up.
  • Secure the taquitos with toothpicks if needed to prevent them from unrolling.
  • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • Lightly spray or brush the rolled taquitos with olive oil or cooking spray to help them crisp up.
  • Place the taquitos in the air fryer basket in a single layer, making sure they do not touch or overlap.
  • Cook at 400°F (200°C) for 6-8 minutes, flipping halfway through to ensure they become crispy and golden brown on all sides.
  • Remove the taquitos from the air fryer and let them cool for a few minutes.
  • Serve with your favorite dipping sauces like salsa, guacamole, and sour cream.
