Description

Crispy air fryer Philly cheesesteak empanadas filled with thinly sliced ribeye, sautéed onions and peppers, and melted provolone — all wrapped in flaky biscuit dough. The perfect game day appetizer or easy weeknight dinner, ready in under 20 minutes.

Ingredients 

  • 6 ounces ribeye, thinly sliced
  • 1/4 cup sweet onion, diced
  • 1/4 cup green bell pepper, diced
  • 1 refrigerated biscuits, 8 count tube
  • 4 slices provolone cheese
  • 3/4 cup mozzarella cheese, shredded
  • 2 tablespoons unsalted butter
  • 2 teaspoons olive oil
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  • Season the thinly sliced ribeye with salt, black pepper, and garlic powder.
  • Melt the butter in a skillet over medium heat. Add the minced garlic, then the onions and peppers. Sauté 4–5 minutes until softened, then remove from the pan and set aside.
  • Add the olive oil to the same skillet and brown the steak fully.
  • Return the onions and peppers to the pan. Add the provolone and stir until melted through. Remove from heat and let cool 5 minutes.
  • Press or roll each biscuit into a 4-inch round.
  • Spoon about 2 tablespoons of filling onto one half of each round and top with 1 teaspoon shredded mozzarella.
  • Fold the dough over and press the edges together, crimping firmly with a fork to seal.
  • Lightly spray the air fryer basket and the tops of the empanadas with oil.
  • Air fry at 360°F for 8–10 minutes, in a single layer, until golden brown and cooked through. Cook in batches as needed.
  • Rest 3–5 minutes before serving. Plate, serve, and enjoy!

Notes

  • Let the filling cool before assembling or the dough will tear and the seal won't hold.
  • Freeze assembled, uncooked empanadas for up to 3 months. Cook from frozen at 360°F for 12–14 minutes.
  • Reheat leftovers at 350°F for 3–4 minutes in the air fryer.
