Crunchy, naturally sweetened peanut butter granola made in the air fryer in just 15 minutes — no oven required.
Ingredients
2cupsold-fashioned rolled oats
1/3cupcreamy peanut butter
1/4cuphoney, or maple syrup
2tablespoonsoil, coconut oil or neutral oil, melted
1teaspoonvanilla extract
1/2teaspoonground cinnamon, optional
1/4teaspoonsalt
1/4cuppeanuts, chopped, optional
1/4cupmini chocolate chips, optional
Instructions
Make the peanut butter sauce. In a small microwave-safe bowl, combine the peanut butter, honey (or maple syrup), and coconut oil. Microwave 20–30 seconds, then stir until smooth. Stir in the vanilla, cinnamon, and salt.
Coat the oats. Add the rolled oats and chopped peanuts to a large bowl. Pour the warm peanut butter mixture over the top and stir until every oat is evenly coated.
Line and load the basket. Line the air fryer basket with parchment paper or a perforated liner. Spread the granola in an even layer.
Air fry. Air fry at 300°F (150°C) for 10–12 minutes, pausing every 3–4 minutes to stir. The granola is done when golden and fragrant — it will still feel slightly soft.
Cool completely. Transfer to a flat surface and let cool completely without stirring to form clusters. Once cool, break into chunks and stir in the chocolate chips.
