Ingredients
Bacon:
1/3cuppacked light brown sugar
1teaspoonpure vanilla extract,
1pound bacon
For One Sandwich:
2slicescinnamon raisin bread
2tablespoonscreamy peanut butter
2tablespoonshoney
Instructions
Preheat air fryer to 390°F.
In a small bowl, combine brown sugar and vanilla extract and stir to combine completely
Place strips of bacon into the basket of the air fryer (you will need to cook it in batches for a whole pound of bacon.)
Sprinkle brown sugar mixture over the bacon, rub it into the pieces, and cook for 5 minutes.
Turn bacon over and sprinkle the other side with more brown sugar mixture. Cook for 4-5 minutes longer or until bacon is cooked and beginning to caramelize.
For each sandwich, spread peanut butter over one slice of bread. Place two slices of bacon over the peanut butter, drizzle with honey, and top with the other slice of bread.
Recipe Notes:We preferred the flavors of the sandwich when the bread was not toasted, but a toasted PB&bacon can also be delicious. Place two slices of bread and two brown sugar-rubbed slices of bacon in the air fryer's basket. Cook until bread is toasted, remove toast, flip the bacon and finish cooking it while assembling the rest of the sandwich. Use good quality peanut butter and your favorite bacon for the best flavors! The honey is optional but adds just a bit of complementary flavor, and it also helps hold the sandwich altogether.
